Potato Chips
Potato chips have a poor reputation when it comes to healthy food but it is possible to still enjoy them as part of a healthy diet – the trick is to make your own potato chips in the microwave.
Firstly the potato needs slicing very thinly and the ideal way to do this is with a slicer or failing that a sharp knife, the slices need to be around 1/16th of an inch if possible.
Once sliced put the slices into cold water to remove the starch and keep rinsing them in cold water until the water runs clear. Once rinsed dry the slices by putting them between two paper towels or two dish cloths, alternatively you can spin them in a salad spinner.
Season the slices according to your preference, any seasoning will do and for richer chips you can brush them in olive oil.
Then place the slices on a microwave proof dish in a single layer on a paper towel and microwave them on full power for three minutes. Turn them over and microwave again on half power for another three minutes. Continue to microwave on half power a minute at a time removing any cooked potato chips until they are all cooked.
Microwave potato chips will remain crisp for a few days as long as they are kept in an airtight container.
